The poussin is a young chicken from the label
family. In some parts of Europe it is known as a 'coquelet' and usually
weighs 500g or more.
The meat of the poussin is particularly tender as it is very young and
light when eaten.
It is high in proteins and has a low fat content.
It is excellent when grilled, seasoned with aromatic herbs and
adapts very well to all kinds of roasts and stuffings. |
